We start Laos food

Lao Noodle Soup (Khao Piak Sen)
This top-notch noodle dish is probably the most common of Lao food and is a staple not so different to Pho which is synonymous with their Vietnamese neighbours. While common as breakfast Khao Piak Sen also makes good for lunch and pretty much anytime of the day. This tasty soup bowl generally comes as Beef or Chicken served in like broth over flat rice noodles and flavourings of fresh herbs. Often accompanied by optional garnish of chilli oil, lime juice, bean sprouts, long beans, holy basil and cilantro. Khao Piak Sen costs roughly 10,000 Kip or 40 Baht.

Minced Pork Salad (Laab Moo)
While famous in Thailand’s Isaan region this fiery, minced pork salad originates from Laos. Easily one of my favourite foods in Asia and a must try for any visit to Laos (or Isaan). While Laab does have variations the most popular dish comes with stir-fried minced pork cooked with shallots, coriander, chillies and mint leaves. Salty of fish sauce and sour of lime for seasoning. Note, Laab can be found using raw uncooked meat which I strongly advise against eating. As most of Lao food Laab comes served with sticky rice (Khao Niew) an accompanying staple. Laab Moo costs roughly 20,000 Kip or 80 Baht.

Green Papaya Salad (Tam Mak Hoong)
If coming from Thailand you should be familiar with Som Tam. Tam Mak Hoong is the Lao equivalent although the term Som Tam is easily interchangeable. This fiery green papaya salad brings the signature sweet, sour, salty and hot signatures of the region. Tam Mak Hoong easily recognised by large mortar and pestles and bright red tomatoes. In the large mortar and pestle strips of green (unripe) papaya are crunched together with a handful of basic ingredients including palm sugar, lime, fish sauce, peanuts and chillies. Other optional Lao ingredients include soft-shelled crab, pickled fish sauce (padek) and Makok a sour olive shaped berry. Eat with sticky rice. Tam Mak Hoong costs roughly 10,000 Kip or 40 Baht.

Lao Sausage (Sai Oua)
The Lao Sausage is not so different to the famous Chiang Mai Sausage next door in Thailand (Lanna Food). A meat treat which fuses the regions signature flavours with sours of lemongrass and kaffir lime and the fiery kicks of chillies and galangal. Fused together with minced pork and pressed into skins. Lao Sausages can often be seen drying at roadsides or strung up at local markets. Unlike the Sai Oua of Lanna Thai food the Laos Sausage comes served with a tasty dry chilli dip (Nam Cheo) and of course sticky rice. A serving of Sai Oua costs roughly 20,000 Kip or 80 Baht.

The marinated beef is left to dry in the sun, catching rays to find the perfect glaze. cousin to Japanese nori and a Luang Prabang speciality, but made with river weed. It’s used to flavor curries and soups but is also deep fried in paper-thin sheets with a sprinkling of sesame seeds for a delicious snack or eaten with sticky rice

One of the most sought after beers in Southeast Asia, a favourite with Southeast Asia’s backpackers and now found exported through Europe. Beer Lao is hard to avoid in Laos and is said to have 99% share of the beer market in Laos. It is everywhere and as far as beer goes it’s not so bad. If bored of the regular Beer Lao (as you will be) you can always try Beer Lao Black brewed with a roasted malt or Beer Lao Gold more expensive but not more delicious. Big Bottles of Beer Lao (640ml) cost roughly 10,000 Kip or 40 Baht. Perfect for sunsets on the Mekong.

Got reminded yesterday by 2 friends here to hit Toa Payoh Lorong 7 Food Centre and Market. 30 years ago I always had an dilemma of whether Scott's Picnic ‪#‎BeefNoodles‬ was better or the Cuppage one though none would beat the old timer Odeon Hwa Heng that made me wait 2hrs for a serve. This beef noodles at Toa Payoh still has the taste pretty close to old Cuppage though it is not that cheap anymore. The Chee Cheong Fun and steamed Yam Cake next stall are also good offerings. Of cos Master's ‪#‎Hainanesechickenrice‬ has a good set meal to offer as well. While you are there you can check out the Chao Zhou fish ball noodles which can be sweet and spicy lol. Note the prices on the 来兴 veg rice stall i.e. $1.50 for 2 veg and rice? Sounds pretty economical. No wonder a queue.

Timbre+ is one of the hottest food places in Singapore at the moment. And in more ways than one.

The three-week-old eating place is packed at lunch and dinner. You have to go early if you want a seat or wish to avoid the long queues for food. That means 11am if you are going for lunch or before 6pm for dinner.

The place is also sweltering at all times of day and night. There is no air-conditioning and ventilation is poor, leading to soaring temperatures, especially in the centre seating area.

This seafood-in-a-bag concept from the chain by TungLok sells basically the same dishes as its older siblings at The Grandstand, Orchard Central and VivoCity - such as seafood combos in sauces such as Zesty Garlic Butter and Beurre Blanc.

But the Dancing Crab chef has created some items just for this outlet too. The standout new dish is Crab Fried Rice ($10), which boasts good wok hei (wok heat) and is packed with sweet crabmeat and pieces of corn, carrot and raisins. This is restaurant-standard fare and worth the price.

Add $2 for a Fizzy Lemonade, one of the carbonated lemonades that Dancing Crab is known for.

To be honest, I had never heard of this wonton mee from Maxwell Market, but it is really good.

No wonder, then, that this stall has one of the longest queues in the hawker centre.

But that could also be because owner Kelly Wong takes a bit of time cooking the noodles with a helper arranging the char siew piece by piece so that each plate is Instagram-worthy.

The noodles not only look good, but they are also springy and do not clump.

I tried the Spinach Wanton Noodles ($4), which come drenched in a delicious sauce. The wontons - two deep-fried and two boiled - are above average with plump fillings of pork and shrimp, and I like that the char siew is sliced thick.

But I think it would be even better if there is a bit of fat in the pork.

The Fishball Story

I first tried young hawker Douglas Ng's fishball noodles when he was still at Golden Mile Food Centre and liked it.

But it is even better now, as the freshly made fishballs have a slightly more springy texture and still boast a distinct flavour of fish. The sliced fried fishcake, too, is unmistakably handmade.

Mix in some good-quality egg noodles and a decent chilli sauce and you have a winning bowl of fishball noodles.

It's not the best I've eaten - those are in Kuala Lumpur - but it won't be easy to find a better version in Singapore. Definitely worth the $4.50 price tag.

Be prepared to queue though.

The Group B streptococcus (GBS) bacteria outbreak may have died down, but stalls which used to sell ready-to-eat raw-fish dishes are still reeling from the effects of the scare.

Food stall owners interviewed by The Sunday Times said they have seen their takings drop drastically. Mr Kiang Choon Tong, 68, stallholder of Soon Heng Pork and Fish Porridge at Amoy Street Food Centre, said business has fallen 60 per cent compared to November last year. His stall now sells only pork porridge.

Lye Bo at Alexandra Village Food Centre has switched to selling noodles instead of porridge. "People still cannot get over it (the GBS outbreak). It is not just going to the hospital a few days, but having to amputate your limbs," said Madam Lee Wai Ping, 41, one of its stallholders.
