WBest is home cooked meal. This is Hakka dish.

Thank you for sharing.

Agree . There is a history to this and during my younger days my mom will prepare this, a giant pot of it. She was once a confinement lady and this is a must have dish for the new Mother to remove the 'wind' from the body. Of course no matter what she said, we will steal some of it from the pot. She will leave it on the stove for a week and instead of going bad, the taste will actually improve overtime. This craving for it leaves a lingering memory which of course we are not able to easily find. So going home to mom's place, finding a dish from your childhood brings back a sense of nostalgia. I think many of other dishes Mom made will be gone forever at the passing of one generation without passing these custom, culture and food. I believe others feel the same and as a society which is a melting pot, will embrace new culture new food from sushi to pho bo, forgetting our mother's our grandma' food heritages. That is sad.

By the way it is not Hakka, it is Cantonese.

Monday starts to discuss Philippines food.

Isaw Manok
One of the most popular local favs is the unique Isaw Manok (grilled chicken intestines on a skewer)- grilled to crispy perfection and glazed with sweet and spicy sauce. Besides the Isaw, there are many other barbecued organs you can choose from – chicken gizzards, liver and goose tongue. They might sound exotic, but give it go and you’ll find them better than any other grilled foods around.

3513

Tapsilog
A typical Filipino breakfast, this platter is made up of rice with dried cured meat and a fried egg cooked sunnyside up. Simple as it is, the Filipinos can’t live without it. Despite its huge portion, especially for a breakfast, you’ll be asking for more.

3514

Chicken Adobo
Tender chicken slices cooked with soya sauce, onion and vinegar, it actually looks like a typical Chinese dish. Don’t let its appearance fool you, the flavourful and well-marinated sauce tastes of Spanish and Mexican influence.

I took this last month at a place called Laguna.

http://i63.tinypic.com/2db04ds.jpg

It is a hotplate with meat and vegetables. They also served fried tilapia.

And in Makati, you can get good quality Spanish cuisines. I took beef marrow. It is like butter on toast. The steak is also prepared well and so the salad. It has a strong Basque region influence.

Kare Kare
This is a classic Filipino stew, consisting of oxtail, tripe, eggplant and Chinese veges. It has a strong peanut flavour and is served with shrimp paste on the side. It’s one of the flagship dishes here in The Philippines, but I can’t say I particularly enjoyed it. An acquired taste, perhaps.

3570

Fresh Lumpia
The fresh version of lumpia is a bit like a spring roll crossed with a burrito. It’s big and fat and filled with meat, lettuce, carrots, peanuts, I think there was even some coconut in there. On the side there’s a sweet sauce, or you can opt for vinegar. It’s pretty awesome. Don’t forget to try the deep fried version – even more awesome.

3572

Beef Mechado
I can’t decide if I like this. It’s prepared by taking a decent cut of beef, stuffing it with pork fat and then slow cooking it in a tomato sauce. Some potatoes and carrots are chucked in too. Sounds awesome right? I think it was a little too tomatoey for my liking, but it’ll grow on me.

Paksiyo Baboy Bisaya (Pork and Banana Claypot)
Shanks of pork simmered in a soy based sauce with bananas. It tastes as wild as it sounds. I freakin’ love it!

3625

Lechon
That is until I tasted lechon. Damn! Them Filipinos know how to cook a pig. This juicy, crispy masterpiece is something I won’t even try to describe. I had the privilege of attending a local baptism and they served up this freakin’ life changing roasted pig, I could’ve eaten the whole thing! Apparently the best lechon is from Cebu city, which is going to be my first stop on my next trip to The Phils.

3626

Lomi
A classic dish from the Batangas area, this consists of flat egg noodles cooked in a very thick, eggy sauce. There’s also a whole bunch of other stuff in it depending on what variation you order (pork, seafood, chicken). It’s so thick that it’s almost like a cross between a noodle soup and a stew. On the side it’s complemented with a sauce of freshly diced onions, chili, calamansi and soy sauce. Put the two together and BAM! It’s seriously magic.

Let us continue Filipino food.

Biko
What it is: Sweet sticky rice.
Why it’s awesome: This creamy, easy-to-make dessert only requires a few ingredients. But it still packs a ton of flavor, and it’s garnished with equally addictive latik, or cooked-down coconut milk or cream.

3919

Kaldereta
What it is: Hearty meat stew with potatoes, peppers, and liver sauce.
Why it’s awesome: The stew is traditionally made with goat, but you can also sub in beef or chicken for those who haven’t yet seen the light

3920

Arroz Caldo
What it is: A thick and creamy rice soup or porridge.
Why it’s awesome: Comfort food at its finest. Rice is simmered with spices and aromatics (and in this case, chicken), then topped with spring onions and fried garlic for extra crunch.

Continue Filipino food

Crispy pata
Not for the easily spooked, this pork knuckle is simmered, drained and deep fried until crisp. The meat is tender and juicy inside, with a crisp, crackling exterior.
Served with vinegar, soy sauce and chili. If you have a craving for this at any time.

3977

Balut
No trip to the Philippines would be complete without sampling its famous balut. Vendors peddling these eggs on the street chant “Baluuuuut!” to entice buyers.
This 17-day-old duck embryo is boiled, served with rock salt or spicy vinegar and is often consumed with beer.

3974

Sinigang
Sinigang is a stew of fish, prawns, pork or beef soured by fruits like tamarind, kamias or tomatoes. Often accompanied by vegetables like kangkong, string beans and taro, this stew is eaten with rice.

EMPEK-EMPEK. (Is a savoury fishcake delicacy from South Sumatera-Palembang, Indonesia. It is made from fish and tapioca. Pempek is served with yellow noodles and a dark, rich sweet and sour sauce called kuah cuka or kuah cuko). I remembered years back, was with my ex gf in JKT: she had this flown in from Palembang! And it is not uncommon to go to a well known store in the city to pack like 20 servings, put them in a box and hand carry them back to the Indo community in SG. They will love you to bits and will do anything for you.

http://i66.tinypic.com/ehxime.jpg

Was in batam and had this for breakfast today.

Indo is a large country. For example, Padang food from different part of Sumatra iternerates into multi, different layers of taste and presentation. It is also ever evolving, ever changing.

Cambodia food today according to request

HAND-PULL NOODLE SOUP AT CHINESE NOODLE
All day and night, a noodle guy swings, slaps, pounds, stretches and cuts strips of dough in front of this restaurant. Chewy, silky, and springy, the noodles land in big bowls of rich pork broth. There’s an assortment of meat toppings available (beef, pork, duck, seafood, pig stomach), but I think the best of the bunch is earthy mushrooms and a handful of just-cooked greens. I like to add a few shakes of Chinese black vinegar and a spoonful of hot chili oil.

6871

NEM LOEUNG AT RATANAKIRI
These meatballs are made from a mix of ground pork and fish, but with secret seasoning inside and sweet soy glaze on the outside, they just taste good. Skewers are served with a small bowl of lightly picked green mango, carrots, cucumber, and ginger—make sure you eat the slaw and the meatballs together. An order of nem loeung makes a great prelude to a bowl of samlaw machou prey, Ratanakiri’s take on Cambodian sour soup.

6872

SALAD FERMIÈRE AT COMME À LA MAISON
This salad would be at home in any American bar/grill, but here’s what makes it special: Juicy shards of fresh roasted chicken, both white and dark meat. Medium-cooked egg, with yolk that’s just runny enough to mingle with everything else in the bowl. Fried potatoes, with crunchy outsides and creamy insides. Each of these is a contrast to the crisp greens, carrots and onions that fill in the bowl. Add homemade shallot vinaigrette, plus a basket of freshly baked baguette on the side. Make sure you sit a table in the garden.

Barbecued Beef and Pork at Sovanna
Remember those old Looney Tunes cartoons that pictured a smell as a hand made out of smoke? And it tickled someone’s nose, pulling him toward the scent? That’s what I think the smell is doing to me every time I walk by Sovanna. Thin cuts of beef and pork hit enormous grills in front of the restaurant and arrive at your table with just the right amount of char. While you’re waiting for the meat to arrive, make your dipping sauce from the ingredients waiting on the table: squeeze fresh limes over ground pepper and salt, add sliced garlic and bird’s eye chilies. As you eat the meat, drink plenty of beer, served Cambodian style over ice. Feel content with your lot in life.

6977

Char Kreung at K’nyay
Cambodia is a meat-loving country, but there’s a growing vegetarian scene in Phnom Pehn. At K’nyay everything is vegan, with an option of adding fish to some dishes. This rich curry, one of the most satisfying and complex I’ve eaten here, is made with tofu, long beans, cauliflower, green peppers, onions and carrots, cooked with an herb paste that includes galangal, lemongrass, turmeric, garlic and shallots, plus coconut milk and a spicy hit of red chilies.

Crispy Rice Noodle Salad with Tofu and Spring Rolls at Romdeng
Housed in a gorgeous old colonial building with a garden and a pool, Romdeng is one of the most atmospheric restaurants in Phnom Penh. Plus, you’re doing good by eating there: it’s part of the Mith Samlanh NGO, which helps former street youth by training them in vocational skills.

Grilled Seafood
With the enormous Tonlé Sap lake in the north, the Mekong and Tonlé Sap rivers running through the center, and the Gulf of Thailand at the southern coast, seafood is part of daily eating and always sparkling fresh. Often, it’s simply grilled or fried. These small squid were grilled on a tableside brazier, and like so many Cambodian dishes, this dish is all about the trimmings: sliced cucumber, Asian basil, and a combination of fish sauce, garlic, chili and lime juice. When you skewer a little of everything together, you get a delicious combination of flavors and textures: tender squid, cool cucumber crunch, snappy basil, and sweet-spicy

Fish Amok
This fish curry is often called Cambodia’s national dish, and for good reason—its presentation is beautiful and it tastes even better. Fish amok gets its signature flavor from kroeung, an aromatic curry paste made with lemongrass, galangal, fresh turmeric, shallots, garlic, and a little chili. The kroeung is mixed with coconut milk, which turns a beautiful golden yellow. Mild white fish and shredded kaffir lime leaves are added to the curry, which is steamed in a banana-leaf cup. Every restaurant prepares fish amok slightly different—some are saucier and others becomes custardy as they steam.

Morning Glory
This green vegetable grows profusely all over Cambodia in damp soil and watery patches near rice paddies. Sometimes farmers cultivate it, but more often people just find a patch and pick it to sell at the markets. Morning glory has hollow green stems, thin leaves, and a mild, grassy flavor that tastes similar to spinach. It appears in a variety of dishes, usually meaty soups like the one pictured here, and stir-fries with garlic, ginger or oyster sauce.
